A plain butter sponge under a whole tray of plums. It is better on the second day, if it lasts that long.
Ingredients
- 1.2 kg small plums, halved and stoned
- 250 g soft butter
- 200 g sugar, plus 2 tbsp for the top
- 4 eggs
- 350 g plain flour, 2 tsp baking powder, a pinch of salt
- 150 ml milk
- ½ tsp ground cinnamon
Method
- Heat the oven to 180 °C and line a 30 × 40 cm tray with baking paper.
- Beat the butter and sugar until pale, then the eggs one at a time.
- Fold in the flour, baking powder and salt, alternating with the milk, to a soft batter. Spread it in the tray.
- Press the plums in closely, cut side up. Mix the extra sugar with the cinnamon and sprinkle over.
- Bake for 40–45 minutes, until a skewer comes out clean between the plums. Cool in the tray.
Small, slightly tart plums hold their shape. Large dessert plums give a lot of juice — bake those a few minutes longer.
